うどんまるごと循環プロジェクト（Udon whole project circulation）

店であまったうどんでバイオエタノールをつくり、これを燃料にうどんをゆでる。「うどん県」のネーミングで知名度上昇中の香川県で、うどんの循環型社会をモデル化する「うどんまるごと循環プロジェクト」が始まる。
　高松市の機械メーカー「ちよだ製作所」の池津社長は２年前、県内のうどん工場から年１千トン規模の廃棄うどんが焼却されていると聞き、産業技術総合研究所四国センターなどと一緒に、うどんからエタノールを取り出す研究に着手した。
　１年前、裁断したうどんに酵母を加えて発酵させ、エタノールを蒸留することに成功。うどん２００キロを一度に処理し、１週間でエタノール６０リットルを抽出する大型プラントも建てた。資源を有効に活用するためにも循環型社会が願われていますが、このプロジェクトが立ち上がることで「うどん県」の知名度が一層アップしそうですね。
