讃岐うどんの本場、香川県で大量に出る廃棄うどんを使って発電する装置を産業機械メーカー「ちよだ製作所」（高松市）などが開発し、２４日午後２時２４分に四国電力への送電を始めた。
　同社が開発した発電装置「バイオガス・エタノール実証プラント」は、廃棄うどんをバイオエタノール発酵装置に入れてエタノール（アルコール）を生成。そこから出たかすを約３７度に保たれたメタン発酵装置に入れ、メタンガスを作り出す。エタノールとメタンガスは発電機の燃料となって電気を生み出す。しかも、最後に残った液体は肥料になるというから、うどんを利用し尽くすというわけだ。　装置は１日に３－４トンの廃棄うどんを処理して年間１８万キロワット時を発電する。一般家庭４０－５０世帯分に相当する電力量で、売電収入は年間約７００万円。当初は生ゴミも使って１日１・５トン前後の処理量で約１０時間の発電に抑え、来年４月にフル操業に入る予定だ。
　香川県内には約８００のうどん店があり、年間１０００トン前後の廃棄うどんが出ているとされる。これに目をつけた同社などが、２００９年から研究を進めていた。
　同社の池津社長）は「エタノールを生み出す酵母の選定に苦労したが、うどんの廃棄物をゼロにできればうどん県としてのイメージアップにも役立つ」と期待を寄せている。
